Ginger Cardamom Cashew

A good friend, who’s been a loyal taster and culinary instigator, encouraged me to create a cardamom cookie for us, for you. It took me two months, playing in the kitchen till I came up with the ultimate mate for cardamom: crystallized ginger. This is a chai-style cookie, with a cashew crunch and melodic layers of spice and sweet.
